This ancient variety is the parent of the other well-known red Cabernet in a cross with the white grape Sauvignon Blanc. It seems only fitting that we become acquainted with the origins of wine and study how to coax new flavors from these old clones. Cabernet Franc is famous for its deeply herbaceous wines in France, yet there seems to be only an attractive glimmer of greener vegetal aromas in this wine from Catherine’s Block in Dineen Vineyard.
