All of our wines are crafted to be aged for many years, the number of which we will only know with time. Please stock up so you can regularly sample the wines and not miss any intermediate combinations of subtle aromas that may be short lived or transitions to more complex flavor components. We like to say that we appreciate all phases of wine flavor profiles, but that we only release the wine when the symphony is ready to play! 2007 VINTAGE RELEASES

2005 Syrah : Washington State$30/750 ml bottle Three big Syrahs come together to form the major components of this wine. They are followed by a generous helping of Grenache that give this wine a structure that will make it enjoyable for many years to come. At bottling we are so very glad these Syrah growers have nurtured these grapes to perfection. A formidable Southern Rhône character of earth and floral notes gives way to berries and chocolate over time.... 75% Syrah (29% Stillwater Creek Vineyard, pH 3.89, TA 6.16 g/L Bottled on 6/23/07; 280 cases were produced. This wine was aged for 21 months in 60% new American oak barrels (40% Saury American, 20% Keystone American from Bouchard) and the balance are once used Saury French oak. |
